Vegan Granola Bars

This is my all-time favorite granola bar recipe! I got it from a dear friend many years ago and we recently looked for it’s origin and couldn’t find it, so I’m just going to give her credit (thanks Karen!) for this delicious granola bar recipe! I’ve modified it to make it vegan.

I have used 3 different types of vegan egg replacement in this recipe Bob’s Red Mill, , the flax egg, and aquafaba.  The latter two result in a slightly softer texture.  All three work well.

Vegan Granola Bars:

Ingredients:
  • 2 cups oats
  • 1/2 cup brown sugar
  • 1/2 cup wheat germ
  • 1/4 ground flax meal
  • 3/4 tsp salt
  • 3/4 tsp cinnamon
  • 1 cup flour
  • 1/2 cup vegan honey or agave
  • egg replacer equivalent to 1 egg (see note), or one egg, beaten
  • 1/2 cup canola oil
  • 2 tsp vanilla
  • 1 cup vegan chocolate chips (or any flavor assortment)
  • 1/2 cup chopped pecans, optional
Directions:
  1. Preheat oven to 350 and grease 9X13 pan.
  2. In a large mixing bowl, combine all dry ingredients and make a well in the center.
  3. Pour in the vegan honey or agave, egg replacer, oil and vanilla. DON’T STIR YET! Add chocolate chips and nuts if using and mix well. (add chocolate chips before stirring, this allows them to mix more evenly throughout the mixture.)
  4. Transfer mixture to a 9×13 inch pan and press down evenly. Bake for 20 minutes.
  5. Remove from oven and IMMEDIATELY cut into bars. (They will be hard to cut once cooled.)

Note: I have used a packaged egg replacer, a flax egg, and aquafaba in this recipe.  All 3 work well.  See additional details in the post: “Vegan Egg Substitutes.”
